Kabuse means ‘covered’ in Japanese, so this type of tea is very similar in flavour notes to gyokuro tea. Master Uejima-san used to cover the tea bushes from direct sunlight for several weeks before harvesting. This method of cultivation gave the tea leaves a sweet umami flavour, but still retained some of the vegetable flavour of sencha tea and the aroma of fresh-cut grass.
