Farmer Akky-san is a truly unique and unconventional personality and so is his green tea sencha. This tea is one of our favorites from the Akky-san collection. Zairai cultivar tea bushes are covered from the direct sunlight for two weeks before the harvest. As a result of this method of cultivation, tea leaves acquire a sweeter umami taste and have less bitterness. Typically, if tea bushes are covered, they are covered for at least three weeks – thus, this tea can be called a successful experiment: with two weeks of shading, it has retained vegetal taste notes and the refreshing aroma of grass that is typical to traditional sencha tea, but also has gained a slightly sweet umami accent, typical for shaded teas.
